Iznad Momjana, na grebenu s kojeg se vinogradi spuštaju prema dolini Dragonje, zatekli smo parcelu s jednim jasnim darom: stalnu sjenu sjevernoga obronka i debeli sloj žive stijene tik ispod tla. Umjesto da gradimo zgradu nasuprot brijegu, ukopali smo je u njega. Proizvodni i podrumski dio vinarije leže pod zemljom, ovijeni masom kamena koja drži stabilnu temperaturu kroz cijelu godinu — istarsko ljeto i bura ostaju vani, vino miruje unutra. Above Momjan, on a ridge where the vineyards fall away toward the Dragonja valley, we found a plot with one clear gift: the steady shade of a north slope and a thick seam of living rock just beneath the soil. Rather than build a structure against the hill, we sank it into the hill. The production and cellar volumes of the winery lie underground, wrapped in a mass of stone that holds a stable temperature all year — the Istrian summer and the bura wind stay outside, the wine rests within.
Materijalnost smo namjerno ostavili surovom. Nosivu priču vodi vidljivi beton — lijevan u oplatu od neblanjanih dasaka tako da na njemu zauvijek ostaje otisak drva — a uz njega crni čelik za stube, ograde i nosače rasvjete. U toj hladnoj, mineralnoj pozadini hrastove bačve postaju ono što i jesu: topli, oblini, živi. Ništa nije obloga radi efekta; beton je konstrukcija i završna obrada istovremeno, čelik je vidljiv ondje gdje radi, kamen je doslovno brijeg u koji smo ušli. We deliberately left the material palette raw. The structural narrative is carried by exposed concrete — cast against board-marked formwork so the grain of the timber stays imprinted in it forever — alongside black steel for the stairs, the railings and the lighting supports. Against that cool, mineral backdrop the oak barrels become exactly what they are: warm, rounded, alive. Nothing is cladding for effect; the concrete is both structure and finish, the steel is exposed where it works, and the stone is literally the hill we entered.
Najveći izazov bio je spojiti dvije suprotne klime pod istim krovom. Podrum traži tamu, mir i konstantnih 14 °C; kušaonica traži svjetlo, pogled i ljude. Svjetlo unutra nikad nije izravno — pada koso, klizi niz board-marked beton i naglašava svaku liniju oplate. The hardest challenge was to reconcile two opposite climates under one roof. The cellar wants darkness, stillness and a constant 14 °C; the tasting room wants light, a view and people. We split them through the section: production sinks into the hill, while the tasting room — the single above-ground gesture — opens to the south, toward the rows of vines. A large glass face is set deep beneath the cantilever of the concrete slab, which holds shade in summer and lets the low winter sun reach the floor. The light inside is never direct — it falls at an angle, slides down the board-marked concrete and underlines every seam of the formwork.
Odnos prema okolišu nije bio gesta nego logika gradnje. Ukopana masa gotovo je ukinula potrebu za hlađenjem podruma; gravitacija vodi mošt s gornje kote prema bačvama bez pumpi i nepotrebnog stresa za grožđe; oborinska voda s zelenog krova skuplja se u cisternu za pranje i navodnjavanje. Zeleni krov vraća površinu vinogradu — s ceste se vinarija jedva nazire, a iz zraka je gotovo nema. Ostao je samo kamen, loza i tanka linija terase nad dolinom. The relationship to the environment was not a gesture but a logic of building. The buried mass all but removed the need to cool the cellar; gravity carries the must from the upper level down to the barrels without pumps and without needless stress on the grapes; rainwater from the green roof is collected in a cistern for washing and irrigation. The green roof returns the surface to the vineyard — from the road the winery is barely visible, and from the air it is almost gone. What remains is only stone, vine, and the thin line of a terrace above the valley.
